Beet salad

“Yo sí que como” and the naturopath Patricia Pérez have prepared this amazing recipe: beet salad. As light as it is tasty. Aside from being very easy to make, it’s rich in iron. Try it!

Ingredients

  • 2 beets, cooked
  • Lettuce sprouts
  • Radish, julienne
  • Carrot, diced
  • Red onion
  • Apple vinegar
  • Apple juice
  • Umeboshi paste
  • 2 teaspoons molasses
  • Lemon zest
  • Handful of raisins
  • Fresh parsley
  • Virgin olive oil

Preparation

Blanch the onion for 2 minutes, then add the vinegar and apple juice. Mix well and let cool. Place all the ingredients in a bowl and season. And then serve.
