  • 3 carrots, chopped
  • 1 potato, chopped
  • 1 onion, diced
  • 1 L water
  • 2 chicken bouillon cubes
  • 1 teaspoon powdered ginger
  • fresh cilantro


With the approaching heat, many people have less of an appetite, yet we shouldn’t neglect our diets or the intake of nutrients. To avoid the latter, one of the most complete recipes, as well as quick and easy to make, are cold soups which will keep us hydrated and will make us enjoy fresh and healthy lunches or dinners. Du to their great versatility, we could make soups with practically any vegetable and ingredient, adapting them to our tastes without disregarding proper nutrition.

As for our proposal, we bring a cold carrot soup with ginger as this vegetable contains a large amount of minerals and vitamins which will give us the nutrients we need to face high temperatures without losing a beat. We shouldn’t forget that carrots, due to their antioxidant properties, are excellent for fighting the free radicals that accelerate signs of ageing, for which it they will be perfect this summer to help us flaunt gorgeous skin.

To make this cold soup, we will begin by cooking the carrots along with the potato and onion. For this we will fill a pot with water and add the chicken bouillon. Once the vegetables are cooked, we’ll blend them to a smooth, creamy texture. Add a little ginger and blend again until it is properly mixed in. Let the soup cool in the fridge before serving. If you wish, you could add a drizzle of olive oil and some fresh cilantro leaves on top.
