Lavender custard

Patricia Pérez has created, for “Yo sí que como”, this fantastic recipe for those with coeliac disease, as it’s gluten-free.  The lavender custard, thanks to the lavender oil, will help us relax. A delicious dessert!

Ingredients

  • 4 egg yolks
  • 50 gr whole cane sugar
  • 2 tablespoons rice flour
  • 350 ml rice milk
  • 3 drops lavender essential oil

Preparation

First, beat the yolks with the sugar, rice flour and some spoonfuls of rice milk until you get a creamy paste.  Slowly add the leftover rice milk, making sure it is well mixed. Place the mixture in a pot, over medium heat, stirring until it begins to thicken. Remove from the heat and continue stirring until it cools. Add a few drops of lavender essential oil and mix well. Lastly, pour the cream into small bowls and keep cold until serving.
